Yes, we are on the same page. However, in the second scenario you describe, the brake feel will be better. People, not saying you, have this misconception that multi-piston calipers will stop much better than single piston - not much of a difference. The difference is in feel, modulation, as well as smoother distribution of the same force over a similar surface area and usually in a sequential manner. Most big brake kits have bigger rotors and this is where most of the difference comes in in terms of heat dissipation for repeated use. Also, a big factor is the overall matching up of the different components relative to the car design. Many cars these days have calipers and rotors larger than found on many Porsches. Do those cars usually perform/brake better? In most cases no in repeated hard use all day at a track. There are many factors that affect braking performance other than just size - more about design and how the components work together in a complimentary way.

But yeah, as others have kinda said, you can't just slap big calipers on a car and expect to enjoy good braking performance. Besides getting the caplipers to fit the car/rotors via a custom machined bracket, a lot of engineering goes into a decent big brake kit in terms of bias, piston sizing, etc.
For example, for a given BBK manufacturer, a 4 wheel BBK will have front calipers with different piston sizes vs. the calipers found in a front-only BBK for the same car.
I would sell that stuff and just go StopTech.
