I got my car back today from the shop...
they put the radiator on a pressure test yesterday... when it was hot and then they left it on all night and everything checked out fine... no problem with the head gasket, and no fluid in the oil, other than oil. they bled it to make sure there wasnt any air pockets.
could there be a teeny weeny leak some where after the thermostat?
im just gonna keep my eye on it and go from there.

Check the tinny upper radiator hose, I think its some sort of pressure release, I forgot to follow it all the way. Mine had a large clamp on it, replaced it with a smaller one that fit tighter and my mystery coolant leak has disappeared for now...
Brent,
Do you have the stock thermostat housing? It is plastic and can crack. Check it out, it may be worth investing in an aluminum one.

Brent,
check the side tanks of the radiator. mine leaked there where it's crimped to the aluminum body. If you see residual chalky stuff, then that is were it's leaking.
Mine level would go to the check coolant stage every 3-4 days.

the radiator was pressure tested hot....then left on overnight.... no leaks.
