I've noticed my radiator fan turns on immediately, even on a cold start. Is this normal? I've noticed for a while that my car sometimes takes a long time to get to normal running temp, and sometimes on a cold night on the freeway, it doesn't even get to normal running temp (according to the coolant temp gauge). So is my fan turning on unneccessarily? Or is it really supposed to be running as long as the motor's running?

Electric fan, or engine fan? Might be a bad fan switch.

theres two fans. is it the one you can see through the front grille (electric) or the one inside the engine bay?

The mechanical fan in the engine bay always rotates.
Have you checked your thermostat?

Yeah, i'm thinking it's the thermostat, but it actually started happening not too long after having replaced the thermostat.

At least you don't have the almost comically common overheating problem.
1, Change the thermostat. Sounds like yours is stuck open.
2, The clutch fan on the end of the engine spins all the time. This does NOT mean that it is working correctly.
It usually roars when the car is warm and sounds like a mid70's datsun.
To test it, you roll up a newspaper and gradually block the blades. If it is good, it will shred the paper. If it is bad , it will stop easily.
3, The AUX fan is relay controlled by the AC switch, and temp controlled by the temp switch in the radiator.
It would be wise to test this fan by switching the AC on to MAX and checking the fan for rotation.

It looks like too many people are ignoring the health of their cooling systems, and this can cause engine failure and is giving the car a bad reputation for cooling system reliability.
Spend the money on maintenance instead of non essential fluff.
