I've driven a number of E36 M3's now and I've noticed that my car's brakes are much more sensitive. I press the brake lightly and it bites significantly harder than some of the other M3's I've driven. I don't think the previous owner installed aftermarket brake pads on the car. It is more difficult to heal toe w/ the more sensitive brakes however since they engage so early. Are they over-boosted? I'm worried about running over boosted brakes since they will make the driver over confident in the braking area.

yeah mine are the same way making heel toe extremly difficult, but I could do it on my dad's Z4 just fine.. Also curious
You should consider yourselves lucky. My pedal pressure sucks; I am going to replace the master cylinder to see if that helps.
I used to feel the same until I realized that increasing the pressure doesn't make a significant difference in deceleration. This makes heel&toe only realistic when you brake in late like at the track or when you are really pressing on. For everyday shifting it doesn't seem worth it.

I bled my brakes a 6 weeks ago.
Never satisfied myself that I cycled ABS.
