I am debating removing the body harness as the car is hardly ever driven on the street and I am mainly keeping it for lights, wipers and power windows but I am thinking about removing all of it since I plan on going with a digital dash and MK60 ABS. Engine and trans are standalone management also. Does anybody that has removed their body harness regret the decision?

I don't drive at night, use poly window inserts, and don't drive in the rain so had zero need for a body harness.
I would remove and wire in whatever switches you need into your switch panel. Get light.
Just thin it out if it’s a track / Racecar.
The instrument cluster wiring is probably the main reason to keep some part of the OEM harness.
I have no "xxxx modules" left in my car, and recently deleted the cluster, so very few OEM wires in the cabin.
I am pretty much at the point where it is a race car only. I sometimes will drive it on the street to do some tuning or car shows. I am ordering a Link dash which is a rebranded aim dash. What solutions have all of you done for the fuel level?

I've read that because of the resistance range, the OEM fuel level sensor output side reads 0 to less than 5v, so that should work fine. Would just need to measure it to calibrate and confirm.
I use one of these, but I'm not sure it's really needed, see above.
And it doesn't buffer the reading level all that well.

I've slowly been thinning my cars body harness as I remove parts that aren't needed for track driving.
I say do it if you can! You'll be surprised how much weight that actually adds to the car.
I started at the rear of the car and worked towards the fuse box. Removed about a fifty gallon trash can full of wire. Removed wipers, removed window motors and used the slide rails to fabricate a hanger that allows me to put the windows in and lock the car. Only thing I kept was the heater and defroster for cold mornings. Rainy works great. Just put in a new windshield and found some 3m tear offs used in dirt tracking that are going on the new glass
The only thing I regret is not starting from scratch. Thinning the main harness sucks and I think it would have been much easier to build a new one from scratch had I been able to source all the connectors.
Otherwise, my advice would be to remove the harness from the car entirely and then start thinning.
