If I have the 12 volt disconnected, do I have any electrical safety concerns disconnecting the coil, and the distributor?

As long as the engine isn't running and the ignition switch is off, there shouldn't be any danger of any induced voltage potentials in the primary or secondary coils.
If you want to be absolutely safe then disconnect the Negative Battery cable.
Note: If the engine is running, there is a self induced voltage across the primary terminals of the coil of a few hundred volts !
So attaching test leads to the coil should be done with the engine stopped.

When in doubt, poke the 'Disconnected' terminals with a screwdriver.

Thanks, the engine is shut down, and I have the battery removed, but I didn't know if there might be stored energy in a capacitor or something.
