You asking about the ones that connect the wiring harness to the injectors? Yes, that's the best way that I know of it to use a small flat tipped screwdriver, or a pick like they are using. Once the harness is fully disconnected, you can lift it out of the way.
As for doing a valve cover, those shouldn't need to be removed, do you have an aluminum valve cover or a plastic one? If plastic, it's best to just replace it, for by now the CCV is clogged up and the cover will be warped and in 6-9 months you will be leaking again.

I have no codes or idle issues, so I think PCV is fine.
I will try the oil cap suction test today.
Also, you do not need to replace the entire valve cover if the PCV is failed.
You can replace just the circular PCV part for $20 off Amazon.

I saw a video where a guy yanked on the injector harness and the entire harness came off with the clips attached. I wouldn't advise that method. That could've been luck, but I remember when I pulled on the harness on my old 240sx and the plastic housings stretched and the clips couldn't hold down the harness any longer. On my e46 I had to replace some injectors and I used a thin flathead screwdriver and slowly pried back the clips and when the harness came free, I immediately pushed in the clips so I didn't lose one. When it was time to mount the harness, I again slowly pried back the clips and gently mounted the harness. Patience is key.
Yes, if the CCV/PCV system has failed, you will need a new valve cover as it's built into it.
