Boys i want a 5 or 6 speed manual but, i can't find a S6S 420G (6 speed), the other option is 5 speed from 3.5 but i will have to change a lot of parts for it.
What options do i have for manual

Patience is the name of the game for the manual swap, I was looking for well over a year before I found a good transmission and parts for my 540. Just wait and do it right with what would be normally in the car.

There are no options besides the 420G. I assume you have an auto trans now.
The swap will almost need a donor car beside you to get the parts needed. Then you will need to reprogram the engine computer.
Only you can decide if it's worth the effort.

I have a spare Holinger H6S dog box and M62B44 bell housing to suit. H6S style gearbox was used in 2000-2006? Australian V8 supercars.
E36 M3 Evo S50B32 dedicated race car, c/f doors and rear wing, fiberglass bonnet Cold air intake. Modified factory ABs by Chipwizzards. ECU chipped at Nuremberg 330HP. Apex wheels. 98octane gas. 1100kg.
E46 330ci modified to GTR replica kit with 520hp M62B44 race engine, S62 ITBs mated to ported M62 heads. 3D printed velocity stacks inside CF plenum. Peterson dry sump with CraigDavies EWP. Straight exhaust with side exit, catcams with solid lifters and hduty springs, std injectors, high compress 12:1, 100octane gas. Holinger SG3 gearbox controlled by Geartronics GCU. Bosch M5 ABS. Aim MXL2 dash and Smartycam HD, Vbox. Apex wheels. Chromemoly front and rear sway bars. 1200kgs

There’s an E39 540 6 speed car in a U-Pull yard up in central FL, at least it was still there last week.
