I am concerned that with the spacers, wheel offset, and lower ride height, that my tires will rub. If they will, then I’ll likely leave the ride height stock.
Thoughts?

IIRC when you lower, you may find it’s best to reverse the spacers and out the 20mm ones on the front and 12mm ones on the rears, that should have the alloys sitting right, without rubbing the arches
From memory, the E60 offsets are around 25 rears and 20 fronts, similar to the E39. The rears you can generally push to 15 and the fronts to 10-0 with the right tyres, but then it’s all down to how much lower you go and hat tires you use on the alloys.
IMO try and find better alloys with a better offset. Unless you’re really sold on those, there’s lot of alloys that suit the E60 well with much more favourable offsets
