Hi. I've installed a turbo in my 316i and it runs almost fine.
1st) It needs throttle while hot to get started otherwise it doesn't. When cold, it starts without throttle but still hard.
2nd) In random times my idle is falling while in neutral.
3rd and last) When I press the gas while cold it plummets and then raises. If I leave the clutch too early it shuts down
Can somebody help? Thanks in advance
You can't install a turbo without proper tune and correct auxiliary equipment to match.

I did everything properly. Didn't DIY this.
Then you should verify your tune with a wideband lambda sensor. Stalling is often due to running very lean.

+1 on what 328Power04 said. Larger MAF sensor (with matching table in DME) or at least a rescale of the original, larger cams if they're restrictive, fuel and ignition tune, possibly colder plugs, higher flowing cats or cats delete...basically the whole air/fuel/ignition systems need to be upgraded accordingly wherever necessary and a remap is a must. No matter who did it there are requirements that need to be factored in.

I got a bigger CAT (200), fiat punto gt fuel injectors, bigger maf from a BMW e30 M3. I got a bigger fuel pump too. 250lph. Subaru spark cables. Iridium spark plugs and ignition coils from a 6 cylinder. Is a wideband sensor gonna help?
Ps. Most of the idle problem happens when I have the a/c on.

Then it's likely your "idle speed with ac on" table hasn't been tuned (you could ask confirmation), or your idle speed tables altogether. And from what you said, did you get it tuned at all? If not, don't look any further and avoid driving the car as much as possible (and not hard by any means) before getting a tune.

It is tuned. And properly. The problem seems to be something else. Now the idle problem happens more even without the a.c. on.
Then I'd say focus on the idle: it seems as if it's not getting enough air while idling (the additional load put on by the AC sounds like a confirmation of that). Either the idle tables were not tuned or tuned properly (doesn't mean the tuner is bad: mistakes can happen) or there is an issue with the ICV itself.
