New E30 Owner - Looking for advice - Car has been sitting - Lots of Pics

I just inherited a 1991 318i, 5speed convertible in Mauritius Blue. One owner, lady driven. Sitting for approx 1 year in a garage, hasn't been started in over 7 months.

Im going to be heading over the garage where it sleeps tomorrow to see if I can get it running with some clean gas and see the scope of work that needs to be done. My ideal plan would be to do a restomod type build, return this thing to its glory and give it a second life.

My mechanical experience is currently novice, so I plan to take my time with this build and learn as I go.
This will be a second vehicle to me, purely a project car.

Looking for advice on what to look for tomorrow... If there are any areas I should give special attention towards?

Pics are not working but sitting for only a year, it should start with a battery and maybe some gas
