If you want to use E39 wheels (hub center = 74mm) you will need hubcentric, upgrades wheels and tires http://www.bmwe34.net/E34main/Upgrad...ls_upgrade.htm
Standard is
Hub center diametre: 72.5 mm
Number of bolts: 5
Pattern: 120 mm (See picture)
Offset (ET): 20mm, The offset is the distance from the hub mounting surface to the centerline of the wheel. Wrong offset = bad handling.

Any E39 fitment wheel will need "hubcentric" rings as the E39 hub is slightly larger, 72.56 for E32 (and most other BMWs) vs. 74.1 for the E39(&X5?).
I suspect that tire will fit too, albeit an odd choice.

The hub centers would be a different size than the e32 I believe
Yes, but you will need a hub-centric ring as the E39 uses a 76mm while the E32 uses a 74mm hub, or is it 72mm? Either way you will need the ring.

Use the aluminum ones, not the plastic ones. I had to put a piece of masking tape around my hubs to get them to stay on the hub and it has worked well for me for years.
E39 wheels will fit with hubcentric rings as mentioned previously. 205/50/16 is a very small tyre for an E32 though... seems more like an E36 size. E32's usually run 225/55/16 or 235/50/16.

The wheels are 16x8 (style 4s very nice) slightly different to what's covered in the guide. It seems 245/45/16 might work, to accommodate the width, without being too tall...What are your thoughts?

I think you may need spacers with 245 tires. I run 225/55-16 on my 735iL and the inner tire rubs slightly against the strut, just enough to remove the dirt.
