I'm having trouble with my new to me e36, when ever I stop, it shuts down. And other times the revs will jump up and down.

I would boil it all down to an electeical gremlin somewhere.
Codes range from fuel pressure regulator to purge canister to the ait/tps/02 sensor faults along with general codes.
Check idle voltage at battery. Check ground strap connections and altinator connections are good. After that
Nobody would recertify these machines after somebody screwed with them without any visibility into what they did.

I'm going to jump in there and say vacuum leak. I've just seen so many problems with these cars and it all related to having vac leaks....I would recommend everyone who buys an e36 to do 2 x things:
1) Replace the cooling system
2) Remove the intake manifold and replace the all the vacuum lines (FPR, Purge, SAP, ICV to intake, brake booster to intake). Check the intake boot. Your e36 will love you for it.

I had the same issue however not the same codes. Ultimately I changed the Crank senor and it seems to work fine now
