I have a set of 18's that were off an E39 but they have a load capacity of 680kg per wheel is this cutting it too fine for a 750il? I am more concerned about a wheel collapse driving hard on a poor quality road

The 750iL kerb weight is around 2085Kg (includes driver), giving 520Kg per corner, a decent margin. At the extreme end, the Gross vehicle weight is 2565Kg, giving 640Kg per corner. If the car was loaded to its GVW limit I don't suppose you would you be driving that hard on a poor surface.
Just in case you didn't know...you'll also need a set of hubcentric rings due to the e39's larger 74.1mm wheel hub vs the e38's 72.56mm wheel hub.

Its hard finding secondhand 18's for E38 and E39 so the hub rings were the first thing ordered for my $400 set of rims but thanks for the prompt
