I'm well aware that this generation M5 is horribly unreliable, but, after all those issues are addressed does the car become reliable? Do these issues such as the valve cover, vanos, smg, etc. apply to the non-M series vehicles?
From what I see, the E60 M5 had the V10. No, the non-M does not have anywhere near the same engine. Early E60's come with either a normally aspirated straight 6, or V8. In 07, the N54 engine added turbos. More power, but more maintenance too.
An E60 in general has a number of gremlins, and the really nasty ones seem to all come out around 100K miles. The repairs can add up to a lot. On our E61, the extended warranty covered up to near $25K in maintenance. However, once you address all of the gotcha's, I would expect another 100k or so with minimal issues. Major systems that had to be fixed/replaced on ours include transmission, starter, AC compressor, fuel pumps, rear shocks, complete rear air suspension system, valve cover gasket, oil pan gasket, oil cooler gasket, liftgate pump (E60 has power lift trunk). We love driving the car, but definitely be wary of what maintenance has been done.
