I know, its a convertible, but my old one wasn't this noisy.
I recently replaced a 05 zhp cab with an 06 same with a lot less mileage.
Old one had better roof so swapped out roofs before selling older car.
Now the new roof seems to have wind noise at freeway speed significantly beyond what I am used to.
It seems be from top of windshield where front edge of roof and windshield meet.
Is there a way to tighten latches or a gasket to be replaced?
Place a strip of masking tape over the seam between the windshield and top. See if the noise is gone. The top frame is probably not aligned properly to the windshield.

I just looked at my M3 top and there IS a gasket/rubber there but I can't see it in the realoem diagram. You might have to discuss it with a BMW parts guy or even a collision shop.
It MIGHT be #8, Windshield frame cover but that's a $200+ part so be really sure it's the one you want. It helps that you swapped roofs so you might be knowledgeable about that gasket.
