Are you trying to update maps or something else?

There is the simple update through USB, which helps it adapt to newer phones/handsfree.

There are also firmware updates using diagnostics port (OBD). This takes more skill and risk, as it can leave it bricked if something isn't done right.

Updates to the unit firmware won't unlock new features. So you won't be 'missing out' if you don't do them.
It depends how technical you want to get with your car.

What they likely mean by coding is custom changing of settings and little things, like removing the disclaimer message at startup, etc.
