OEM turbo seals just went out the other day. I ordered a set of RB one's and I have a few questions regarding what can be re-used when installing new turbos.

You don't have to replace any of it. Some people replace the exhaust manifold nuts, but I don't think there's really a need to. Just replace the necessary gaskets, and O-rings on the coolant and oil lines. And grease the O-rings before installation to prevent them from tearing and to allow them to slide in easier.
