How do you kno when your thermostat going back

It is unclear from your post exactly what you mean. But if it's what I think it is, you are asking how you know if the thermostat is working correctly. You can test a thermostat in a pot of water on the stove. You will need a reasonably accurate thermometer. Thermostat will start to open at the published temp (on the body of the thermostat). It'll be fully open within about 10 degrees of that temperature.
I also see in your profile that you list a 2002 BMW 325xi. Which is an E46. The principle of testing a thermostat applies to all engines so equipped though.
