I have an 82 320is, but it has a m20 stroker engine. 87 bottom end 88 top.
I have the e21 console, with the e21 evaporator.
So can I just get the e30 engine bay parts and it will work, or is this going to
be a major problem putting a e30 compressor/condenser/and hoses in this car?

Since you have an m20, poke your head over to mye28 and get the brackets for a sandensen compressor. Cheaper, more efficient, and easier to replace than the e30 unit. I want to say most guys go with the 705(708?) compressor model. Then it's just two custom hoses from the compressor ports outward

It will as far as I know, but it's just older, less reliable and less efficient tech. You'll be able to run r-134a properly as opposed to straining the system. I'd personally replace the condenser up front as well with a parallel flow and make sure the aux fan is working. Toss in a hi/low pressure switch and you'll keep your investment from going boom.
I think the adaptors sold there are just adaptor arms from the m20 bracket to the compressor

Install a aftermarket parallel flow condenser. The performance gain will be very noticeable.
