All of the panels in the drivers' footwell are disassembled. I cannot find the part numbers on the parts to look them up for diagrams. There are a bunch of screws in the car from a variety of other parts that need fixing but this is where I'm starting. The only panel still on down there is the speaker cover and the panel under directly under the steering wheel.
Any advice would be appreciated! I'm very excited to start this long project and get the car on the road.

Welcome to E32 ownership. My advice for you is to find a donor vehicle for all the missing parts. It is not cheap or easy to source many of the interior and body parts because of the relative rarity of these vehicles. Alternatively, as PrivateVariable said, realoem is invaluable.
More broadly, if you don't already have a Bentley manual, it would be wise to invest in one. Also, your car is a strange year, so when you check things on RealOem use the last 7 digits of your VIN to identify your car. To give you an idea, mine is also a 1988, but it's from October of 1987, and some parts are specified "Pre-3/88." So be cognizant of that. If you need anything, I've found the forums to be generally a welcoming place, so don't be afraid to ask if you come across one too many "Well did you check the battery" threads.
