Do you care whether it gives your left leg a workout and is a bit like an on/off switch?

It’s not torque not hp on which clutches are rated. A 2.5L making 700 crank hp probably does not make 550 lbs tq.

At what RPM though?
(700X5252)/6500=565.6tq, 525.5 @ 7000

Peak power is usually in the 6500 range with S52 or maybe M50 NV cams (lower rpm with M42 cans) , unless you have a centrifugal supercharger or a turbo with significant boost creep.
