Got coolant dripping down the front of the engine while running, so it’s water pump time again. The last one I replaced was ~2003-2004 so my mempry fails me...
Do I need to order the large o-ring #2 or does it come with the new pump??

The first #2 O-ring (large) is part of the thermostat housing and not the water pump assembly. The thermostat housing has a groove where the big O-ring sits inside.
The smaller #2 O-ring, you will have to get separately. With that said, because they are inexpensive parts, I add them to the cart just in case I'm wrong. It's better to have a couple extra O-ring left over then to not have them and then end up paying more for expedited shipping and wait time when I realize I need the parts (don't ask...hehehe).

I recently changed mine. Best price for a Saleri was here: http://www.rmeuropean.com/Products/1...62-MFG575.aspx. IIRC it came with the o-ring for the pump, but not for the thermostat housing, or the tubes, There are links on the page for those. I used silicon grease, and they slipped right in.
Yeah, saw that one but says “out of stock”, so went ahead and ordered from Gault. I believe you’re right, they all come without t-stat and the 2 rear smaller o-rings.
But, I thought the consensus here was not to use aftermarket water pumps? No problems with this one?

There's a big discussion somewhere on this forum about whether or not Saleri is the original OEM supplier. I can say this: the Saleri I got was an exact match to the OEM one I took off, very nice machining and casting, steel impeller, etc. I had no qualms about using it, an it fit perfectly.
It's unlikely that the o-rings are the problem. More likely the water seal in the impeller's bearing has failed in which case you need to buy a 'new' (remanufactured) pump.
You should also replace all 3 o-rings, and smear them with silicone grease, or they'll get caught up when you try to slide the pump into position.
Vaseline is petroleum based, right? Is it safe to use on the o-rings? Probably is but thought I'd mention it. Not sure what they're made of.
Incidentally, when I removed the thermostat it was broken into three pieces. It seems the metal fatigues from temperature changes and falls apart. The loose piece was stuck in the thermostat which is all that prevented it from falling into the impeller. You might want to replace it, if you haven't already done so, and save some hassle later.
I would probably use some silicone grease, and I think dielectric grease is actually a silicone grease, because it shouldn't attack the oring and its water proof.
Nitrile, Viton and EPDM are all common black rubber o-rings.
According to this site:http://mykin.com/rubber-chemical-resistance-chart... Nitrile and Viton can be used with petroleum/gasoline and glycol. However, EPDM can't be used with petroleum/gasoline but is OK with glycol, which would make it usable in a cooling system. The o-rings in PC water cooling systems are often EPDM.
I couldn't find any reference as to what these o-rings are made of. I used silicone grease just to be on the safe side.
