I have a 08 535xi and I know I can go staggered safely, but I'm just having a hard time deciding on width and offsets. If y'all would be so kind to help a brother out with info and pic's that'd be awesome! I'm going with 19's, preferred info with these but I'm open to other options if they catch my eye.
The important thing to remember with E60 AWD cars is that the rolling circumference has to match within 3% on all four wheels. Otherwise, you risk trashing your transfer case. A site like http://www.willtheyfit.com/ will help you determine this.
Wheel offsets for xi's range from ET 35 to 45.
Start with a site like tirerack.com to determine standard tire sizes for your model.

It's easy enough to go square on the E60/E61 that I usually suggest that path over staggered, just to avoid having to play tire size games. But if you want to go staggered getting less than a 1% match in tire sizes is fairly easy with all the options around nowadays.
On my wagon, I went 19x9 ET35.5 (ET48+12.5mm spacer) front and 19x9 ET18 rear with 255/40/19 tires all around, rear required a mild roll to avoid rubbing, the front is rub free. If I had to do it again, I'd go with about a 5mm less aggressive setup in the rear to avoid having to roll.
With AWD E60s I usually push my guys towards square setups and I usually suggest 19x9 ET35 squared with a 10mm spacer in the rear IF you want a more aggressive rear stance.

Seems like you are using oversized tires. Stock sport wagon is 245/40/18. If you keep 40 serie when going to 19 and stay the same it wider, you are increasing the diameter over stock. I am not surprised that caused rubbing.
