You actually have three on the 'e' engines. The taller, 2-pin, typically blue or white, is the temp sensor for the ECU. The later blue one can be used in the earlier engines with the white ones. Nominal values are the same. It just has tighter tolerances.
The taller, 1-pin, typically brown one is the sensor for the gauge.
The short 2-pin one is a switch for the idle control unit (ICU).
Engine cold (< ~113° F (45° C)) - switch open
Engine warm (> ~113° F (45° C)) - switch closed
