It is normal for it to stay in the middle unless something unusual is going on. It is controlled by the computer, so it doesn't really move much, if any for normal variations of the temperature.

It should not really go down while driving. Your friend should investigate that.

If you're worried, just get an ODBII reader and log water temps and other engine metrics.

100%, my understanding they usually fail stuck open. I had this same realization wondering what was going on with mine. Noticed in the highway it was at 1/4 and sometimes took forever or never to get up to temp/halfway mark. Ended up replacing the water pump, thermostat, sensor. After flushing the coolant and replacing a few hoses for good measure it gets to the middle in about 2 blocks and stays there.
If it's moving below TDC during operation, especially if it drops there after it's already warmed up, it is a faulty thermostat
