It's really imposible to give you an estimate that is accurate, there are many on here that know values well but without images you're not going to get a real solid estimate.
Outstanding condition is translated very differently by people, and the only real way to get a handle on it is to put up lots of images showing the good and the bad- at 180k miles, I'll bet there's some bad, normal wear and tear at that milage can really affect a car's value, having documention in the higher milage range will go a long way in establishing a higher value... But, it's not going to be a 5 figure $ car with those miles.
There was a beautiful e23 735i that sold on BAT a little while ago, I know the owner, it had 85K original miles and was a REALLY NICE car, it sold for $7,500- Granted not a 745i, which I think in similar condition would bring more $$$.

If you can use the internet, you can post pictures. Until then, asking 'what is it worth' is pointless. Nearly 200k miles is not going to be outstanding due to wear, that to me is a car rarely driven and garage kept its entire life. Can it still be quite nice and a good, fun driver? Sure.
200 pages of records from when? 2002? That is 15 years ago so anything that was performed then is pretty pointless now. It is great to see it was kept up over the years, but with huge lapses in time from major services the car degrades. Rubber does not last and there is a bunch under it. For all you know, it is stuck in safety mode making no boost. KYB struts versus Bilstein is a big difference. Meyle versus OEM suspension components. Nissens versus Behr for radiator. Ansa versus OEM for exhaust parts.
Buy a high quality camera if you are trying to sell it and take photographs of all over. Same goes for under it. Then scan all the records to show what was done and when.
Here are major items that fail on these cars with approximate mileage I have experienced -
100k driveshaft
50-200k auto trans, high mile stock may shift but no where near as well as fresh
50-100k turbo specific rubber under hood
100k struts and mounts
50k trailing arm links aka 'dog bones'
50-150k mufflers
Just my opinion, take it for what it is worth.
