My coolant level light is intermittently on and off the temperature seems to be okay as long as I'm driving and the fluid level seems to be okay I'm lost
The expansion tank (ET) coolant level switch is in the bottom of the ET. They do go bad. The good news is that the switch is inexpensive and easy to replace. Replacing the switch do not require the loss of any coolant as it screws into a cavity in the bottom of the ET.
just to add to the excellent info above - if the system hasn't been serviced recently, now would be a good time to have the belts, hoses, tank, thermostat, water pump all replaced along with a coolant flush, etc.
