I love looking at slightly rusty E39s. I crawl under the cars to see if the suspension has been refreshed, and most of the time they are.
W126s are even better to spot because you can take a peek at the odometer. Last one I saw was a 500SEL owned by a vet with 315k.

Hoping I can get the seller down some. The car drives well but you can tell the engine hasn't been touched in awhile. I'd almost rather the inverse.

Be patient is the most important advice. It took me a few months and a couple wasted road trips to find the right car searching every medium in a 500 mile range. Keep looking at Craigslist, autotrader, cars.com, etc. Of course be careful with the usual craigslist jalopies.
The cars worth buying will be the ones in which the owner took the time to wash the car and take good, clear pictures, as well as writing an ad using full sentences. Cars with dark, blurry, pictures and ads like "drives gr8 perfect condition needs nothing except my mother backed it into a telephone pole but have no picture come pick up today" are going to be basketcases that aren't worth their weight in scrap.

Then try new spark plugs, cap and rotor, wires, oxygen sensor, crank shaft position sensor, coolant temp sensor, air flow meter, idle control valve, throttle position sensor, digital motor electronics unit, harmonic balancer, fuel injectors, engine harness...
