I'm removing all the wiring from the engine bay along with the relay and fuse boxes ( red and yellow).
In the foot well some of the wiring terminates in large connectors but some of it continues down the floor conduit.
What's the best way to disconnect the wiring? Do I need to remove the interior first?

There are connectors with latches. Dis-engaging the latches while unplugging is the art. All of the harnessing was assembled as sub- assemblies then built into the car. You may find some of the (rubber)boots through the firewall deteriorating. Take pictures at each step.
Harnessing can get modifications on the fly during vehicle manufacture and the original drawings sometimes don't always get updated, and or the wiring diagrams may not be for the exact VIN number you have.
Also try not to flex and twist the original harnessing too much. Wire insulation may have lost some of its flexibility since the 1990s.
