Like DG says, if you/he want coilovers, they will need to be custom made. There is nothing available aftermarket for the E31.

I believe Bryson has a "coilover" set-up on his beautifully set up car...(custom ALL the way)
I am desperatly trying to achieve the "stance" that his car has.. (without coilover)

Yep, it's custom all the way. There are a few 8's that are running setups similar to what I've got, with varying degrees of tweaking depending on the intended use. Is this a street car, weekend/track car.. what is the desired use?

True.... there is nothing out there.
Though a user here might be able to have some made in the UK I believe.
Sadly for many, including myself, this is not an option as it does not come with a certificate from TüV, DOT or similar.
There are not many options for the E31 out there.
Most use Bilstein shocks, they work ok, but there is not really any better alternative out there.
Springs can be had with various drop from i.e Eibach, H&R, and KAW.
