I have a '95 e36 that I'm refreshing. The carpet is currently tan, want to change it to red. Everything I have read online warns that carpet dye isn't for drastic color changes. Anyone of any experience doing drastic color changes, and how'd you do it.

Phhh...
Think about it this way....How much of the actual carpet will get wear if you use floor mats...Very little.. Since its tan red will cover it great! The best stuff I have used is SEM products. clean the crap out of the carpet and spray away then get some red mats for it and you should be fine.
I've sprayed a few carpets, tan to black , and gray to black. and black with black to freshen it up..No problems with any of them.
Th floor mats are the key...;)

If you spray the carpet a trick I learned was to buy two brushes. one corse and one medium. Paint a section and use the brushes to brush the dye/paint into the nap of the carpet makes afor a much better color penetration.

What kind of black (Flat, satin, etc) do you usually use?

I use the SEM black. I don't think it comes in any particular shene. I also picked up three cans of a carpet/die at O'riely's I can't remeber the name but it worked really good on the black over gray car I did last year.
