Think this is my best option. As of now no parts have been pulled from the car. Don't know what to ask for anything as of now because all of this is happening pretty fast and i'm not exactly happy about it. I will work on prices here in the next couple of days but with schoolwork I can't think about it right this second. I think most of you know what the car has but here is a list of what would most likely be parted:
Jim Conforti chip for EWS equipped e34 540i
Supersprint Exhaust
Custom Heat-shielded short ram intake (my car was routed through high-beam)
Brembo 332mm BBK w/ 2 piece floating rotors (passenger caliper scratched)
Possibly my JB Racing Flywheel
17x8 throwing stars
18x8.8, 18x9.5 SSR Competitions
Ground Control Coilovers w/ custom valved konis
RD Sways
RD Stressbar
KMAC Camber Plates
GC Camber Plates
3.15 LSD
UUC Short Shift Kit
2 More front konis
Possibly Sport Seats (drivers have a couple small cracks due to age)
Or if someone just wants to buy the whole thing that can be worked out. Shortened strut housings could come with the ground controls.. obviously shipping will be a pain on a lot of these items.
As far as the motor goes... it dropped a cylinder and has coolant in the plugs. I am not willing to pay someone to take it apart and tell me what went wrong so I am just trying to cut my losses and move on. Motor had 120k on it and ran extremely strong until this happened... :(

I know... it's a serious shot in the gut for me. This was my baby that I hoped to never have to sell but right now I just have no choice. If it happened a year from now I would be ok but I need transportation and since I am currently a full-time student my income is seriously limited.

You can throw me out an offer. Right now it just seems like it will be worth more to part the vehicle but it would obviously be less of a pain to sell as a whole.

How many miles on the diff?

Dude, you can't sell it. As much as I would want some parts from your car, you've gotta hang on to it. Especially if it just a blown headgasket. If the engine's dead then it can't hurt to take it a part and find what the problem is. Then at a minimum just swap the engine for a junkyard engine and don't use the car on the track. You can find one on eBay for under a grand. Doing a swap only takes a weekend. Trust me I've been where you are several times. You'll regret selling it. Don't worry about getting a used engine and then rebuilding it. Pull your engine, drop a junk engine in there and then rebuild yours. If you can't afford it, then sell some of the parts from your car.
What ever you buy to replace it won't drive as well and will probably require work to get it back to the point where you're comfortable. If I was closer I could help you.

If not, I call dibs on the koni's (I'll sell my Bilsteins with GCs) and maybe the BBK (since I have the 322mm setup)

In talking to the mechanics they led me to believe that the motor was pretty much toast but I don't know. I just had the headgasket replaced about 10-15k miles ago... and I'm not sure what junk motor I could throw in there to work with my 6-speed tranny... it's just an awful lot of work and i'm not exactly mechanically inclined enough to do that kind of work on my own.

Also, with my current situation I just can't afford to put another 1500 in this car right now...

How much for the brakes? And more details about them please - for how many wheels, what torque they put out, what size wheel one would need (17" at minimum?), etc.

I think there's too much invested in that car to part it out. Try to keep it. Buy a $500 beater in the meantime and at least let it sit until you get the heart and $$$ to get her running again.
If you really don't want to deal with it, then part it.

Did you see the coolant temp at the time? It almost sounds like you had a bubble in your cooling system, which led to an overheat failure.
But, I must concur with red, another M60B40 will work great, and could be done at a minimum of expense, probably for about 1-2k, including labor. At this point, it is just an engine replacement, rather than an exotic swap. Hell, I'm tempted to help you do it pro bono cuz I like the car so much.

Sorry guys... internet has been really off and on the last few days... actually down since I think Monday.
I think that must have been what happened... I got no warning lights, no beep, and I usually keep a decent eye on the temp gauge.
