My '95 M3 is missing the underpanel is this why it gets quite darty at 120+mph?

naw, i took mine to 145 w/o and underpanel. Feels like it gets more stable as the speed increases. But it MAY be a possibility.

What are you tires like and what is the road condition??

The underpanel is there to help engine cooling... I don't think it would cause a darty feeling at high speed.
I'm guessing it was because of the road or a cross wind or something.
You may need an alignment... Or your tires may have poor wear.

You're gonna need a taller spoiler and a front splitter.
Alot of lift is being generated at those speed so you better becareful!
