I'm not really familiar with wheel offset. I'm looking to buy a set of wheels for winter driving. I'm considering two different wheels, both are 17" x 8". One is with 35mm offset and the other is with 40mm offset. If I'm not mistaken, the stock wheels are 42mm offset.

How the offset difference would make any impact, if any? Should I be concerned with the offset difference?

The wheels with an et of 35 will stick out 5mm more. Both will work fine if they're only 8" wide. The extra 5mm will only be important if you're running really wide tires, ie not winter tires.
