Can the rear center headrest be removed? I was able to get the two side ones out, but so far can only seem to elevate the center one, but not remove it.

Anything can be removed with a sledge hammer, but is that the route you're willing to take?

I took a look. That is a sedan but the center headrest is likely the same on the touring model. Based on the resistance I’m getting, I’ll bet the center one has the pins holding it in, as shown in the video. It’s a bid odd that the center would be different. The other two lifted straight out with some strong effort.

Since I did not see the video, I would assume if this sedan had seats that folded down then it should be the same, other than the holders for the rear shade (in the touring), the fold down seats should be the same. I haven't checked RealOEM yet, but you could probably cross-reference folding seat part #s

iirc. When I had the rear seat redyed the center headrest came straight out but took a bit effort.

The center headrest removal process is both hard and easy. You have to push the headrest FORWARD while pulling up. If you get it wrong it's impossible to remove. If you push it firmly FORWARD while pulling, it is surprisingly easy. Autowork like life is 90% technique and 5% strength, and 5% luck.
