Other than aerodynamics, do the under skins perform an important function with cooling, etc? My back one near the oil pan came off. I know I want to replace it, but I am wondering if it serves a functional purpose?

Aerodynamics, noise, dirt. You'll be ok without it for a while. And they are just plastic.

I never even knew the car came with them until I saw a nice e38 with them installed. I've been driving bottomless for 3 years now.

I've had the same question. I'd rather leave it off. The oil pan cover is gone anyway. So far, I haven't noticed any issues.

They prevent you from seeing where the leaks are.

They are Extremely Important in my opinion. With the cover's in place you eliminate all road grime, salt, snow, water, etc.... from getting to everything and exposed parts Weather so much faster leading to quicker failure. I'm sure they also help in reducing some road noise also.
Keep them on and replace them if missing. Also if its a minor oil leak they help keep the garage floor clean of oil and they are so easy to remove to check for leaks and do repairs so why remove them and leave them off. You want to buy hoses, belts, starters, wirs, etc... more often???

I don't really think they are that important, but I will still leave mine on just in case they make any difference in airflow. If you need some let me know, I've got an extra.

I'll be ordering my Euro covers in a few days.

I notice more wind noise with mine off..... recent test drives after engine work before committing to putting it back on. I agree with the comment about catching minor leaks...... M62tu is a leaky motor, the belly pan helps stave off the drips on the garage floor.

+1 on all these points. I suspect that they aid cooling as well. Air passing through the engine bay doesn't just spill out anywhere, but is forced to pass all round the transmission and the exhausts. That small panel at the rear under the transmission has an upward deflector moulded into it, which must be there for a reason...

My other e38 didn't have one and I can't tell the difference in wind noise with my new one.
