Has anyone tried this kit yet? I'm curious how difficult the rubber pieces are to replace on the metal plate. Seems like this would be better than spending $250 on a new one.

From experience on my E32 I can tell you that not only the rubber pieces inside wear over the years, but the plastic also = get's brittle, and I have had the plastic hose connections on the heater valve broken and coolant was suddenly leaking. That could have caused in worst case a headgasket problem.
I would go for a new one.
I have repaired/cleaned quite a number of E32/E34 heater valves before, relatively easy. See on my website the pics under fixes>>>climate control>>>Clean / Repair the water valves
These are the heater valves for E32/E34, but same design, so that will help you.

search on Ebay USA for example for the seller: ferrulli_motor_works
or just gooegle search for: BMW Heater Control Valve Repair Kit
and you find it.
that was already discussed many moons back in the E31 forum http://forums.bimmerforums.com/forum/showthread.php?1671645-Heater-control-valve-internals
