So I am super lazy and took +2 weeks to ask about this.

Short story: My car sat for ~7 days in ~50F weather. When I finally drove it I found condensation on the inside. Is that normal?

Did it rain a lot while the car was parked? Or, was it extremely humid before? It's possible you may have leaky seals that allowed water into your car, or the weather was so humid that it caused the condensation. Next time you come across a very hot day, leave your car out in the sun with your windows cracked open about an inch, that'll help dry out any remaining moisture.

It was raining but it was at the base of the windshield. I have a pic but it is too large to upload. And I don't think there will be any very hot days for a while.

Ah, now I think I understand better what happened. IMHO, it is quite normal.

If the humidity is heavy or like drops, then you may have some seal issues. Door seal is not uncommon.

From Thursday to Tuesday it rained. Sunday was the last day I drove it. Then the following Friday I drove it and noticed the condensation.
