The tire store lists the 255/35-ZR18 (F1 GS-D3s) as a tire that fits on a 18-8 rim.

How does this affect tire performance when installed on a 18-8 instead of an 18-8.5 rim?

It will "fit", but will feel very sloppy due to the unsupported sidewall and subsequent bulge. Pump them up to gain that lost transient response and the tire will balloon and your footprint will shrink. I'd stick to 245's or less on 8's and 255's or less on 8.5's.

Thanks. I'll avoid that combo.
Discount Tire may list the 255 as a tire that fits, but the 255/35 F1 tire specs says 8.5" to 10" is needed.
