Proper offset

Anyone - Please advise:

Will the Motorsport 17 Wheels 40mm offset fit
a e36 1994 325is with 215/45-17 tire set-up?

I currently have ACS Type II 35-mm offset.

Yes, the BMW Motorsport 17 (x 7.5, like what came on '95 M3's) will fit any E36 body car. The 40 mm offset is closer to your OEM set-up than your ACS's, which will allow you to run wider tires if you want. You can easily run a 235/40/17 tire on those wheels without fender rolling, spacers, etc.
