Gonna tackle this when it gets warmer out. It is gumked up under there, and I want to do a clean of the engine bay. is there a DIY on removing the IM? Also, should I just replace the hoses instead of cleaning them? What causes all the grease/oil under there? car is a 95 M3 with around 144k.

You need to change your oil filter housing gasket. That is what is causing that buildup under the intake manifold.

There are several places where oil can leak out under there. Valve cover gasket, VANOS oil line, oil pressure switch, o-rings on the 2 plugs at the back of the oil filter housing, the OFH to block gasket, dipstick o-ring, etc. Once you have the intake manifold off it'll be pretty easy to see/access everything.
I haven't tried it yet but I've heard decent things about scrubbing bubbles.

Oil under the intake manifold is indicative of leaking ccv valve hoses, vanos oil line or oil filter housing gasket. The ccv lines are easy to see with a flashlight and inspection mirror. The valvecover gasket doesn't leak out the top. And would be extremely easy to see if it's leaking behind the vanos solenoid. My earlier post assumes the op has actually looked at his engine.
