Im trying to decide if 215's are to much stretch on the wheel? I think im safe with 215's on the fronts which are 8.5. Should I run 225's instead?

That will be quite a stretch.
Seeing as my post didn't really help, here's a 215/40 on a 9.5" wheel.

If you want the rim sitting flush with the fender you need to stretch the tyres to stop it from scraping.
To get a stretch on a 8.5inch rim you'll need 215's.. However 8.5inch wide rims sitting flush at the front with 215's will leave inchs of clearance between the strut.
On an E36 with highly stretched tyres you can fit 9.5inch wide at the front and 10 inch wide at the back. 225 at the front and 245 at the rear. Wheel offset will be +35 front +40 rear

So What brand of tires should I go with? Ive used nankang tires on my old wheels ( 18x8 w/ 215/40/18) and haven't had good luck with them. My new wheels are 19x8.5 front and 9.5 rear (miro stp3's) I am going with the same set up. Old front offset was 35 and so are my new ones and rears are 33 offset. I also have 10 or 12mm spacers in the front, and 20mm spacers in the rear.
Edit: I was looking at Falken fk452's... Just want to know what is a good tire to stretch that is safe.

I've heard good things about Nexen and Maxxis if you're looking for low end tires.
Higher end ones should be fine, but seeing as their stretched so much, I wouldn't bother spending the extra cash.

Even Pirelli's don't break the $200 mark.

Again, I wouldn't care about the brand. You'll probably be running a bunch of camber, and ride quality isn't even a factor.
