How hard is it to take the intake manifold off these engines? Am i looking at multiple hours? what should i look out for?

I pulled one out a junkyard car in like a half hour taking my time.

There are numerous posts on here about this, try a search for more in depth detail.
Yes, it will take several hours...and possibly lots more depending on how much cleaning of the "V" and intake mani/ports you want to do. Also suggested is replacing all gaskets (Intake ports, TB, PCV Plate), injector gaskets, PCV plate, cracked knock sensors, and possibly the valley pan while you are in there. Doing the Valley Pan will require removal of either water pump or rear collector, which will also mean new gaskets for those as well...if you water pump hasn't been replaced in a while it might also be a good time to do that.
Basically while you are in there, just take care as much as you can afford so you don't have to do it again.

The only reason I need to remove the intake is due to my pcv plate failing. Ill most likely have to do some cleaning as it sucked up tons of oil

You don't have to remove intake to replace PCV plate, though its probably recommended since you will strip at least a couple of those Torx bolts holding it on.
Please take the intake off to repair the OCV. You'll thank me later. Also, replace the torx bolts with hex-heads. It's not hard to do, I've had mine off and on about 10 times in the past year. You get it down pretty quick :D

My father and I replaced PCV plate only in less than 2 hours with only a mag lite. The power was out during 30 mph wind gusts and we were in the garage. We did not strip any of the torx bolts, so we reused them.
Edit: Did you still need that PCV plate from me?

Nope, I got the plate + gasket cap and o ring at cost -10% from my dealership. Thanks though
