I've never replaced the belts on anything in all honesty. Seems like it should be simple. How off am I? Should I go for it?

Not at all, just pull up on the belt until the holes in the tensioner line up and put something in it to keep it in place, like so...

Then remove the belt and replace following the routing properly.

Also, for the A/C belt you need to put a socket on the tensioner and turn it to loosen the belt, not sure what size, I'm sure someone can fill you in.

You need a HEX socket to lossen the tensioners in order to remove the belts. Plan on changing the large belt and the ac belt because you need to remove the ac belt in order to get the large belt off.
