Are the holes above the starter and phantom starter appropriate for an engine stand? They're about all there is, but that seems like an awful lot of shear force on aluminium...

You should have at least 8 other holes to use, I always use the top two and the two farthest out on each side. The top two bolt holes on the M60 are smaller than the others though so I would use the next closest ones.

The factory stand requires removing the headers, plates bolt to the block, allows full movement and very secure.

This requires a special engine stand or mounting system doesn't it? There are a lot of rickety engine stands out there but I've seen a few that were rock solid even with a super heavy engine on them. I just pulled an M60 a couple weeks ago and it really seemed to put a strain on my engine hoist.

Well, I don't have any special plates or the factory stand. And there are only four holes on the rear of the engineblock that actually pass through it - above and below the starter hole on both sides (only one of which is actually a hole). Made of aluminium and not right next to reinforcing ribs or whatnot, they don't look especially strong to lever a 300#+ engine.
We had a fully dressed 2JZGTE on this stand a couple of months ago and it was fine, but it seems a bit unbalanced with the wide V8. Right now I've got it on my stand, with the engine crane supporting about half its weight, so this is somewhat moot.
