I have someone that can do the paint, but I am wondering how much labor would be to strip the entire car and then put it back together?

$3,000-$5,000

Do the prep work yourself and save.

I have seen cheaper paintjobs peel off within months.

a full color change is pretty expensive, depending on the price of the car it's probably a lot less loss if you sell it and buy a color you like

...to do a proper job you are looking at $10k at a minimum. To do it properly you need to pull all the glass, moldings, interior, carpeting, wiring looms etc. You'll also need to pull the engine and wiring from the engine bay. A respray in the same color is cheaper but you still need to pull moldings and some glass.

In addition to the fact that respray lowers the resale value of the car, painting it a non-standard or non BMW color may kill the resale value entirely...

I am not worried about resale because I plan on keeping it for a very long time. I want to paint it the 70's Porsche color "Mexico Blue" similar to this one seen her by Studie Japan....

I'm not feeling that color but I would guess atleast 10k for a good job not to mention the time it would take and paint doesn't last forever so it would probably have to be resprayed again sometime down the road.

Yes, it'll cost a hefty penny, but its worth it to get it done right. DON'T cheap out on a paint job, especially since you want to keep this thing for a while. You'll just end up spending more money over the years touching up the sh*tty paint.

I wouldn't really worry too much about getting it resprayed down the road, IF he spends the time and money on getting a quality job. There are 2002's, E21's, E24's, ect out there with original paint in great condition. If its taken care of and detailed correctly it'll last.
