So I was driving my 89 535I home from my lady's house last night and I noticed the temp creeping up at low speeds and idle, so once I got home I noticed a half inch split in the uppper radiator hose. So I bought a new one, and I was wondering if I could replace it without draining the entire cooling system.

You can yes, but you'll need to fill and bleed.

bleed screw on the top of the thermostat housing. It looks like it is not screwed in all the way normally. For the M30 you need to turn the heat on full and run the fan on high. Run the car warm so the thermostat opens and watch the needle to make sure it doesn't overheat. Bleed the air out.
Repeat at least three times until no air remains.
Watch the engine temp for a while afterwards and if it goes past 1/2 bleed again
